We exist to rescue men and women, to restore their lives and help rebuild families.

We provide Residential Rehabilitation in a therapeutic community located in Yarramundi.

ONE80TC is seeking to fill the Full time or Part time role of Chef or Cook - someone with a passion for food and people.

The primary purpose of the Chef/Cook is:

  • To provide leadership and oversight with regards to all culinary/catering activities within the ONE80TC residential facility.
  • To provide supervision and food handling training for residential students.
  • To oversee the cleanliness and hygiene, including food allergies of staff and students, food spoilage and wastage.

We are looking for Full time or 25 hours per week, Monday - Friday.

The position is based off Springwood Road in Yarramundi NSW (near Richmond).

This position is more about people and how to support them in their journey of recovery.

You need to be able to prepare 3 1/2 meals a day with limited budget and limited supplies. You will have a team of clients to assist you, so leadership will be an essential skill.

Job Requirements:

Key priorities:

  • Operate within the ONE80TC - Mission, Vision and Values, Management Systems and the Position Description.
  • Provide leadership and direction to staff members and students including: working side-by-side with students of the ONE80TC Program to help them develop new skills.
  • Provide on a day-to-day basis as per the policy and procedures of ONE80TC and operating budget for the coordination of the culinary activities for the Residential Program and events.
  • Keep the Centre Manager/General Manager regularly updated on operational issues.
  • To provide quality service delivery for student care and case management in the ONE80TC Programs, in a therapeutic community model.
  • Work effectively and productively with all staff colleagues and ensure consistent communications is in place at all times with management.
  • Ensure a comprehensive safety induction/orientation takes place for all staff, students, volunteers working in the kitchen.
  • Develop strong and professional working relationships with all nominated external suppliers and service providers.
  • Commitment to good/ethical practice and maintaining appropriate boundaries with students.
  • Establish and maintain a nutritionally balanced menu plan with respect to main meals and snacks to be consumed by students.
  • Ensure Residential Food Services excellence in customer service for student care.
  • Coordinate and organise student canteen stock purchases as per established buy list planned with the Centre Manager.
  • Oversee the cleanliness and hygiene, including food allergies of staff and students, food spoilage and wastage.
  • Provide general oversight and training to the area of Residential Food Services and ensure adequate student and staff are available to manage food and beverage preparation for students of the program.
  • Actively contribute to innovative ideas and improvements to the Residential Culinary Services.
  • Develop and maintain a regular maintenance program with respect to the ONE80TC kitchen facility and equipment.
  • Ensure that meal storage, handling, temperature checking and recording complies with the ONE80TC documented Culinary/Catering Standards and NSW Food Authority Standards.
  • Ensure Incidents Forms are completed and forwarded to the Centre Manager for all incidents by the end of shift.
  • Develop and maintain student roster with regards to food preparation and clean up, ensuring that adequate staffing levels are in place at all times to meet the needs of ONE80TC Catering Services 24 x 7.
  • Provide regular updates to the Centre Manager and General Manager on maintenance activities and issues.
  • Ensure all areas of the ONE80TC residential kitchen is clean and maintained according to accepted New South Wales Department of Health and Hawkesbury Council Food Safety standards.
  • Oversee WH&S instructions for staff/students for work conducted off site when support catering services at ONE80TC events.

KEY QUALIFICATIONS, KNOWLEDGE AND SKILLS:

The successful applicant will ideally have:

  • Minimum of 2 years of operational experience in hospitality and cookery sector.
  • Minimum Cert IV in Hospitality or Cert IV Commercial Cookery or equivalent.
  • Broad knowledge of the operational elements of running a commercial kitchen.
  • Previous work experience with mentoring, youth/social work, counselling, mental health or the alcohol and other drug sector.
  • Excellent time management skills.
  • Proven capacity to work in a team environment. Ability to work effectively as a team member, take initiative and direction well.
  • Good communication skills both written and verbal.
  • Exhibit a personal commitment to excellence, ownership, service, integrity and personal learning.
  • Completion of the Residential Program and/or at least two years’ experience in recovery, if applicable.
  • Good interpersonal skills including the ability to network and negotiate with a range of individuals.
  • Ability to deal with unpredictable situations and behaviour utilising de-escalation and conflict resolution techniques.
  • The ability to deal with problems associated with Alcohol & Other Drugs use, gambling and mental health conditions.
  • Understand and operate within financial budgets and parameters.
  • The ability to remain focussed under pressure with proven capacity to work in a team environment.
  • Requirement to undertake a Criminal History Check, Working with Children Check and any other relevant checks as required.
  • Current NSW Driver’s Licence
  • First Aid Certificate

Essential requirement:
